Shanghai Crabs (2004-10-17)
Crab is my second favorite food. So every year around this time I look forward to buying Shanghai crabs imported from China. We even went to Shanghai in 2000 just to eat these famous crabs. That trip turned out to be the worst one we ever took and the local crabs were no better than those found in Tokyo markets.However my love for those fresh water crustaceans did not
diminish. These crabs aren't nearly as meaty as Australia's mud
crabs but the flavor of their meat is deliciously sweet. Besides,
connossieur of Shanghai crabs don't eat them for their meat, what they
want is the roe. Its flavor is intense and fragrant, almost
exerting a smoky taste; a property no other species of crabs' roe can
mimic.
If you like crab roe, you will love
the roe from a Shanghai crab.
